If you make pizza in a normal kitchen oven, a pizza steel is one of the most effective ways to get more heat into the base. Steel transfers heat into dough faster than a typical pizza stone, helping the underside colour and crisp before the toppings overcook.
Quick answer: for most domestic ovens, a pizza steel is usually better for fast heat transfer and strong base browning. A pizza stone is lighter, often cheaper and gives a gentler bake. In a dedicated high-temperature pizza oven, you normally use the oven's own stone floor rather than adding a steel.
What is a pizza steel?
A pizza steel is a flat plate of food-safe steel that sits on an oven rack and acts as a powerful baking surface. You preheat it with the oven, then launch the pizza directly onto the hot steel.
The key difference is conductivity. Steel passes heat into the dough very efficiently, so it can compensate for the relatively low air temperature of a domestic oven.

Why does a pizza steel work so well in a home oven?
A conventional oven may only reach around 250–300°C, depending on the model. That is far below the temperature of a dedicated Neapolitan-style pizza oven, so the challenge is getting enough energy into the base before the top dries out.
A thoroughly preheated steel stores heat and releases it into the dough quickly. That can improve oven spring, colour and crispness, particularly when you are using a properly fermented dough such as our 48-hour pizza dough balls.
How long should you preheat a pizza steel?
Give it time. A useful starting point is 45–60 minutes at your oven's highest normal baking temperature. Thicker steels can need longer.
Place the steel in the upper half of the oven if you want stronger top heat from the grill or top element, but leave enough clearance to launch and turn the pizza safely. Every oven behaves differently, so treat the first few pizzas as calibration.
What temperature should a pizza steel be?
There is no single magic number because steel thickness, oven temperature and pizza style all change the result. In a domestic oven, the goal is simply to get the steel fully heat-saturated at the highest suitable oven setting.
If you use an infrared thermometer, remember shiny metal can give inconsistent readings depending on the device and surface. Time and repeatable oven setup are often more useful than chasing an exact number.

Can a pizza steel burn the base?
Yes. The same conductivity that makes steel effective can scorch flour or the underside of a pizza if the surface is too hot for the bake time.

Should you use a pizza steel in an Ooni or Gozney?
Generally, no additional steel is needed in a dedicated pizza oven that already has a purpose-designed baking stone or floor. Those ovens can operate at temperatures where steel would transfer heat extremely aggressively and could burn the base before the top is ready.
Use the cooking surface supplied or recommended by the oven manufacturer unless its instructions specifically support an alternative.
How thick should a pizza steel be?
For home use, steels are commonly sold in several thicknesses. A thicker plate stores more energy but is heavier and takes longer to heat. A thinner plate is easier to handle and may be perfectly adequate for one or two pizzas.
If you regularly cook several pizzas back to back, greater thermal mass can help recovery. If you value easy handling, a lighter steel may make more sense.
Pizza steel or stone for Neapolitan-style dough?
In a true high-temperature pizza oven, use the stone floor. In a normal home oven, a steel can be an excellent way to get more energy into a Neapolitan-style dough even though the bake will be longer than a traditional high-heat bake.
The dough still matters. Avoid overloading the centre with sauce and wet toppings, and give your oven enough time to recover between pizzas.
How do you look after a pizza steel?
Let it cool completely, scrape away baked-on flour or food and keep it dry. Bare carbon steel can rust if left wet. Many steels benefit from a very light protective seasoning with food-safe oil, following the manufacturer's instructions.

Is a pizza steel worth it?
If your main pizza oven is your kitchen oven, yes: a good steel can make a substantial difference to the base because it tackles the biggest limitation of domestic pizza baking — heat transfer from below.
