Why Does Pizza Dough Keep Shrinking Back?

Why pizza dough snaps back when you stretch it

Gluten gives pizza dough strength, but that strength also creates elasticity. If the gluten network is still tense, the dough behaves like a rubber band: you make it wider, then it pulls itself back towards its original shape.

  1. The dough is too cold. Chilled gluten is less relaxed, so dough straight from the fridge or freezer is more likely to fight you.
  2. It needs more rest. Handling tightens the gluten. A short covered rest can make a dramatic difference.
  3. It is under-proofed. Dough that has not had enough time to ferment and relax often feels dense and stubborn.
  4. You are stretching too aggressively. Pulling hard in one direction keeps re-tightening the dough instead of opening it evenly.

How to stop pizza dough shrinking back

  1. Cover the dough so the surface cannot dry out.
  2. Give it 10–15 minutes without touching it.
  3. Check that it is fully defrosted and no longer cold through the centre.
  4. Restart by pressing gently from the centre outwards.
  5. Rotate the dough as you work instead of repeatedly pulling the same edge.

Will adding more flour fix dough that shrinks?

No. Extra flour may reduce sticking, but it does not relax gluten. Too much flour can also dry the outside of the dough. Rest and temperature are usually the better fixes.
